The Herbivorous Butcher is a fully vegan butcher shop and deli at 507 1st Ave NE in Northeast Minneapolis, open Tuesday through Sunday, selling handcrafted plant-based meats, artisan vegan cheeses, and ready-made deli sandwiches. It made history in 2016 as America's first vegan butcher shop, founded by siblings Aubry and Kale Walch.
